Onions chopped
Vegetable oil for sauteing
28 ounces can tomato puree
28 ounce cans tomatös with
- juice
Tasse/n White vinegar
Packed dark brown sugar
Granulated sugar
Salt (I've heard it's
- better to use 1 Tb)
Freshly cracked pepper
Paprika
Chili powder
Molasses
Tasse/n Orange juice
Liquid Smoke (I'd leave
- this out)
Brown (dijon) mustard

In a large saucepan saute the onion in the oil over medium-high heat
until golden brown. (7-10 min). Add all remaining ingredients , bring
to a boil, then reduce heat and simmer uncovered at lowest possible
heat for 4 hours. (This long cooking removes as much acidity as
possible from the tomatös). Puree sauce in 2, 3 or more batches to
prevent it spilling out of blender/food processor.
